Apple Salad With Honey Dressing
Preparation time about 15min.
For 4 servings you will need:
1 small iceberg lettuce or ½ of a large head
3 medium apples
1/3 cup walnuts
Honey Tarragon Dressing:
½ Cup sour cream
2 Tbsp. fresh lemon juice
1 Tbsp. honey
½ tsp dried tarragon leaves
¼ tsp salt
Tips: Some apples turn brown more quickly than other varieties, to prevent browning sprinkle apple slices with lemon juice or ascorbic acid peel apples if they have a hard-waxy peel.
For 2 servings:
Half all the ingredients. Use chicken pieces.
For 8 servings:
Double the ingredi0ents.
Preparation:
1. Tear lettuce into bite-sized pieces. Put into salad bowl
2. Slice unpeeled, cord apples thinly. Toss together with the lettuce if not serving immediately, drizzle apples with fresh lemon juice. Set aside.
3. Add walnuts to salad just before serving.
4. Server spooning dressing over individual servings of the salad
Honey Tarragon Dressing:
1. Blend sour cream with lemon juice, honey tarragon and salt.
2. Let stand for 30 min to blend flavors.
3. Whisk together again before serving.
Good served with: Roast, pork, or poultry.
