Preheat oven: 375*F
24 fresh chicken wings trim excess fat
3 cups vegetable oil, for frying
4 Tablespoons butter
1 Tablespoon white wine vinegar
5 Tablespoons Louisiana hot sauce
Preparation:
1) Heat the oil in a heavy skillet or electric fryer to 375*F. Season chicken wings with salt and pepper to taste and fry 5 to 6 pieces at a time in hot oil until golden brown (about 10 minutes). Drain fried wings on paper towels.
2) Heat a large skillet over medium heat for 2 minutes. Add the butter, wine vinegar and hot sauce and stir until butter is melted. Season the sauce to taste with salt and pepper. Add the fried chicken wings and stir to coat the wings with the sauce. Lower the heat to low and cook wings for 10 to 15 minutes so that the absorb the sauce.
3) Serve the wings warm.
