, A cookie jar filled with home made gingerbread cookies (or other cookies treats) is every child’s dream. Let your own children or grandchildren help out cutting the dough into different shapes.
For 5 dozen cookies you will need:
2/3 cup butter or margarine, room temperature.
1/2 cup brown sugar, packed.
1/2 cup light molasses.
2 tsp, ground ginger
1 tsp, ground cinnamon
1 tsp, ground cloves
1/2 tsp, ground nutmeg
1 tsp, baking soda
1/2 tsp, salt
3 Tbsp, water
1/2 cup chopped almonds
about 3 cups all-purpose flour
Preparation:
- Cream butter and brown sugar.
- Add molasses and spices, mixing well to blend.
- Mix salt and baking soda and dissolve in water. Add mixture to batters.
- Divide batter in half. Add almonds to half of the dough
- Finally add flour to the 2 batters.
Dough should be pliable and easy to roll out. Let dough rest in refrigerator for about 2 hours. - Roll out dough, a little at a time, on a lightly floured surface to about 1/4-inch thickness, The thinner the dough, the crisper the cookies.
- Cut out cookie shapes as desired, small hearts, stars, gingerbread men or just rounds,
- place on greased cookie sheets.
- Bake at 400*F for about 6 to 8 minutes cool.
